Bruchetta_pic_from_Baldwin.jpgServe this three-in-one appetizer at your New Year's Eve party. Each healthy topping will complement your entrees and dazzle your guests.


  • 1 multi-grain baguette, sliced into 1/4 inch slices (about 36 slices)
Tomato Topping
  • 1 large tomato, seeded and chopped
  • 1 garlic clove, minced
  • 1/4 medium red onion, chopped
  • 1/4 cup chopped fresh basil
  • 1 tsp dried oregano
  • 1 Tbsp balsamic vinegar
Greek Topping
  • 1/4 cup Kalamata olives, chopped
  • 1/2 cup roasted red pepper, chopped
  • 1/4 cup feta cheese
  • 1 tsp olive oil
  • 1 Tbsp red wine vinegar
  • Black pepper to taste

Pistachio Topping

  • 1/3 cup pistachio nuts, chopped
  • 1/2 cup chopped fresh cilantro
  • 2 Tbsp lemon juice
  • 1 Tbsp zesty low-fat Italian dressing
  • Black pepper to taste


Preheat oven to 350°.

Arrange baguette slices on 2 baking sheets. Lightly coat baguette slices with nonstick cooking spray. Toast baguette slices in oven for about 5 minutes, or until lightly browned. Remove from oven and set aside.

In 3 separate bowls, mix together each set of topping ingredients. Arrange baguette toasts on a platter. Spoon toppings on top of toasted baguette slices (will make about 8 slices for each topping).

Yield: 12 servings
